One of the staples in my fridge is raw beetroot pickle. Ages back my friend had shared this simple recipe but the tip on how to peel raw beetroot was my Mom's. Mom had such a curious nature and never stopped learning and experimenting.
Scrub and clean raw beetroots in water. Dunk them fully in clean water and refrigerate overnight. I often leave it for longer, depending on my mood or if I get busy. The thickness of skin might also affect the time, so try it out...
Notice that hardly any colour has seeped out.
Next day, cut off the tapering portion (not on the leaf side) and with a simple knife start peeling the skin back like a banana! No need for a peeler, etc. I actually enjoy it ;-D
Well the next step is grating the beet. Make a solution of cider vinegar, sugar (I use either brown sugar or boora), pinch of salt, pepper. Mix in the grated beet, put in an air-tight jar, and refrigerate. It can be eaten immediately, but certainly the next day onwards.
I hate cooked beet. So this recipe is something that appeals to me and is a quick replacement for a proper salad. A healthy side adding tangy sweetness. It goes well with so many cuisines!How do you prepare and eat your beets?
Thanks for the information! I have always found beets difficult to peel when they are raw, but I'm going to try your (your mother's) method and see if I can make it work for me. I'm not fond of beets, but because they're good for you, I try to eat them ....sometimes.... Usually I chop them and simmer them all day when I make vegetable soup, although the soup often turns sort of pinkish when I do that.

DeleteI like the colour of beet, but when mixed with other salad veggies, it kind of takes over completely. One year Mummy had made naturally coloured water for Holi - pink with cooked beet, green with cooked spinach, and blue with fabric liquid blue 🤩
I like it a lot, boiled and then only salt and oliv oil, I eat them with other boiled vegetables, usually carrots and potatoes. One of my favourite dishes. I peel them like you do. Last year I put one beet in the pasta and made red ravioli (they were a surprise for the valentines day).

DeleteI've never tried raw beets before, but I will be on the lookout so I can try this! I'd always tried them from a can and did not care for them at all, but recently I was given a jar of home canned beet pickles and they were delicious! I've also put them in fruit smoothie to get a heartier flavor that isn't too sweet.
